Overnight Almond Chia Pudding & Chocolate Avocado Mousse (FOOD PHOTO SHOOT)

I know in I’ve already said I’m not much for following food trends but every once in a while I get curious to find out what all the hype is about over certain things.

Chia seeds seem to be everywhere right now, or is it just me? Apparently it’s not if they are available to buy in Southern Chile where you can’t even buy pecans (I’m missed those so much!!). They are a bit steep but for small servings every once in a while it’s not too bad. I seem to be in an avocado mood today too, don't I? Well, it's amazing. Today happens to be another one of those ridiculous food holidays, it's tapioca pudding day. Well, I've never tried and don't plan to try making it but I do like chia pudding as you all know so I did that for you!

Since I started taking in interest in cooking and baking I have played with many different diet restrictions. With a family as big as mine it seems there is always either a member of the gang or a friend with specific needs that I have enjoyed trying to meet. It’s kind of like playing Chopped or Iron Chef when you have to use and/or exclude certain ingredients and I love the challenge.

We have friends that eat gluten free, some that eat dairy free, some vegetarian, and even some vegan. These days it’s just a good idea to be familiar doing it all so I like to play around. I made this as a sugar free recipe using stevia and the fact that it’s dairy free, gluten free, and vegan happens to just be a bonus.

It’s childishly simple and quick to mix up and then it’s ready for you to grab and go in the morning. Better yet, savor and enjoy a ready breakfast with a steaming mug of jo or perhaps eat it as a guilt-free dessert after a long day of hard work.

The texture of the pudding might remind you of tapioca (or so I’ve heard. As I said, I’ve never had tapioca pudding). Some people might be weirded out by the seeds and if that is the case feel free to blend it smooth.

I have to say that there is something about these flavors together that is just YUM! You won’t feel like you’re eating something healthy even though this is like a powerhouse of superfoods in on dish!

They were great photos. You explained your criteria well. There's such a difference between real food photographers and people who take pictures -- as that Photochallenge shows so clearly. And there has to be photogenic food, too. So food photographers should get a double reward!

Looks delicious, Chia is so loaded with great nutrients and fiber, and it is so filling. I even grind it and use it to create flat breads mixed with Flax seed flour in a 50/50 mix with egg whites and a little coconut milk. It yields over 9000 mg of omega 3 per flat bread or equal to 9 fish oil capsules from plant sourced omega 3. Also over 14 grams of fiber. They are super nutrient and fiber dense yet very low in calories. Chia is amazing and becoming a lot cheaper as it becomes more and more available. I remember when Coconut oil was not popular and it was so hard to find and expensive lol. Same is happening with Chia as it is easier to find any where and cheaper now.

I have an entire bag of chia seeds in my pantry that I opened for one recipe. They definitely go a "long way" You have been giving me so many more ideas. I like tapioca pudding so this may be a way of using them. Thanks so much for the ideas!

Great post. Chia seeds are super healthy...I always make sure to have them stocked in my food cabinet. I'm gonna try your recipe, but I'm gonna substitute cinnamon for the stevia (not a fan). Thanks!

How did you make the gif, if you don't mind me asking?

Thank you @vegetarianbaker! For the gif I use a pretty simple tripod set-up with a remote so I can snap lots of shots while I do each step. Then I edit the photos in bulk, making sure they are all lined up, and upload them to one of the many gif creator sites online. After that you just adjust speed and a few other things and voila!
