Happy Friday dear Steemian food lovers!

I'm so excited about another vegan Steemit food contest by @deliciousplants because this week's theme is VEGAN CHEESE 😍

So I take this as an opportunity to share my veeery favorite plant cheese recipe with you, here we go...

VEGAN CASHEW MOZZARELLA CHEESE

You think you can’t live without cheese? Good news: You don’t have to! Even as a vegan πŸ˜‹ This recipe is super easy and you only need 6 ingredients! πŸ’š

Prep time: 4 hrs
Portions: 1 loaf

Ingredients:

  • 400 ml of water
  • 2 tbsp Psyllium husks
  • 100 g cashews
  • 2 tbsp nutritional yeast flakes
  • juice of 1 lemon
  • Your favorite spices (salt, chili, pepper, paprika, herbs of your choice)

Instructions:

  1. Let the psyllium husks soak in water for at least 2 hours.
  2. Soak the cashews for at least 2 hours (or over night).
  3. Put the psyllium husk β€œpudding” into a blender and add the drained cashews, nutriotional yeast and the spices.
  4. Blend for 3 to 4 minutes at highest speed until a thick cheesy consistency.
  5. Put the mass into a bowl and store it in the fridge for at least 2 hours, even better over night, so it can get firm.
  6. Tip the β€žcheeseβ€œ out oft he bowl (upside down) and cut into pieces.

Does it melt?

I used it for lasagna once and it onlymelts a bit, but not completely. You can't compare it to real cheese because cheese is almost 100% fat and this vegan version doesn't contain too much fat. But it is super yummy and worth a try for sure :D

Hey Sofia, wow your mozzarella really looks amazing! How did you manage that it got this pure white look? I tried a similar recipe once, but my mozzarella turned out to be yellowish at the end.

Hey Chris, thanks so much πŸ’– Actually mine looked a bit greyish but in the picture it looks super white because of the lighting. The colour depends on the spices you use (and sometimes also on the cashews, some are more yellos and some more white). Sometimes I use ground paprika and it turns orange :D

Hey Sofia, I see! πŸ‘ŒI thought that there might be some ingredient that has somewhat of a natural bleaching effect.
You are right, it would be good to use cashews that are rather white.
