VEGAN & SUGAR-FREE RHUBARB RASPBERRY CRUMBLE 💜 | Veganes Crumble mit Rhabarber und Himbeeren

Hey lovely Steemians, I hope you had a wonderful day 💚

Today I want to share one easy fresh summer dessert with you! This vegan rhubarb and raspberry crumble is sugar free and contains only good ingredients - it makes a nice sweet breakfast, too 💚

Prep time: 50 min
Portions: 8

Ingredients

 
Crumble:

  • 100 g rolled oats
  • 100 g oat flour
  • 5 tbsp date syrup
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 50 g melted coconut oil
  • some water

Compote:

  • 400 g rhubarb
  • 200 g raspberries (fresh or frozen)
  • 5 tbsp date syrup
  • juice and zest of 1 lemon
  • 2,5 tsp cornstarch

Instructions

 
Compote:

  • Wash and dice rhubarb.
  • In a saucepan bring to a boil together with raspberries, date syrup, lemon zest and juice and let it simmer for 10 minutes.
  • Add the cornstarch and stir well.
  • Let it simmer for 3 more minutes and let compote cool off for around 15 minutes.

Crumble:

  • Pre-heat the oven up to 180 degrees Celsius.
  • In a a bowl mix the dry ingredients and add melted coconut oil and date syrup.
  • Mix into a dough with your hands and add some drops of water, if needed.
  • Grease an oven dish with some coconut oil and with ¼ of the crumble lay out a base.
  • Bake the crust for around 10 minutes and afterwards fill the dish with the compote and sprinkle with the rest of the crumbs.
  • Bake for 25 minutes and enjoy warm or cold.
