Grilled Chicken Avocado Melt -An Original Recipe Home-style Fine Dining For The Lazy Butt

There are weekends when you just want to stay home and relax. Sometimes you just don't want to do anything and it's fine as long as you have some good alternatives; not having to compromise for a great weekend at home. Do you feel like it's one of those days? I got you covered!

This is an original recipe I have thought up one lazy Sunday. I looked in the fridge and for a moment, as I was still scanning the contents of the shelves and drawers, I had an aha moment! My stomach was growling and I had better start cooking and it had to be something quick. So I went ahead and prepped all that my mind had thought of that had to be in the dish that I was going to experiment with. The dish I made was good for 2 people. (Me and my husband)

These are the Ingredients

  1. 2 pcs grilled chicken (cut like a steak)
  2. 2 strips of bacon
  3. 10 pcs. button mushrooms (quartered)
  4. Salt & pepper
  5. Shredded mozzarella cheese
  6. Avocado

Procedure:

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Salt and pepper the grilled chicken to taste
  3. Place the chicken, bacon and (mushrooms on the side) in a baking sheet with parchment paper and bake for 12 mins.
  4. After 12 mins, take the chicken and mushrooms from the oven and assemble the other ingredients on the grilled chicken. This is how I assembled mine: Chicken at the bottom most part, followed by a strip of bacon, then mozzarella, followed by some pieces of quartered mushrooms.
  5. Bake for another 12 mins.
  6. After 12 mins, take it out of the oven and top with a thin scoop of fresh avocado and sprinkle some salt and pepper.
    You can also add some cayenne pepper for a little kick if you like.

The beauty of this recipe is that it's fast and easy and you don't have to take culinary arts to come up with a dish that looks divine! I promise you, with every bite, you can't help but say, "hmmmm!!!" I'm not even exaggerating. When I took my first bite of this dish, I felt like I'm also feeding my soul. You know the term "food for the soul"? Mine is literally just that! At least that's how it felt to me. This has been one of my most requested dishes ever since!

Hi @!amy-goodrich! You can replace the bacon with a slice of tomato... it would still taste yummy :)
