Quiero compartir una receta que aprendí durante mi estadía en el Norte de España y que he adaptado a mi gusto.
Ingredientes para 4 personas:
- 2 kilos de pulpo
- 4 patatas medianas.
- 1 cebolla grande.
- 3 dientes de ajo
- 1 hoja de laurel
- 1 pimentón.
- 1 cucharada de aceite de oliva
- 1 chorrito de vino blanco
- 1 chorrito de tomate frito
- Perejil al gusto.
- Sal al gusto.
Preparación:
Lavar y trocear el pulpo en rodajas, posteriormente colocarlo en una olla grande con agua hirviendo a fuego fuerte y una cucharadita de sal. Pelar las patatas y cortarlas en cubos, incorporar las patatas al agua hirviendo con el pulpo cuando el mismo haya alcanzado los 15 minutos de cocción.
Picar finamente la cebolla, los ajos, el pimentón, y el perejil y ponerlos a freír en un sartén con aceite de oliva hasta que queden dorados. Una vez en este punto agregar un chorrito de vino blanco, otro chorrito de tomate frito y una hoja de laurel. Revolver hasta que hierva dos minutos y luego incorporar a la olla con el pulpo y las patatas.
Dejar cocinar todo junto por 45 minutos a fuego medio, revolviendo cada 5 minutos y asegurándose de que el pulpo y las patatas se encuentren sumergidos totalmente en el agua. Probar antes de finalizar y corregir el punto de sal.
