BLUEBERRY LEMON OVERNIGHT OATS 🍋 | vegan & healthy | make-ahead breakfast

Hi friends! Guess who’s back with another overnight oat recipe. We are making some blueberry lemon oats. I think these are my favourite ones at the moment.

This breakfast screams summer! Lemon makes them so refreshing and then we’ve also got the freshness from blueberries. And wait, that’s not even everything yet. These overnight oats are eaten cold, straight from the fridge! It’s perfect for warm sunny day which are ahead of us.

I love lemon flavoured anything and I find lemon to go well with blueberries. The flavours go perfectly with the texture of overnight oats. If you’ve never had them before, they have pudding-like consistency, especially if you use instant oats. Chia seeds are what gives them a thick combined texture.

If you are looking for a quick, cold and delicious breakfast, these overnight oats are the way to go.

I find they only taste delicious when eaten cold. I don’t like the flavour of them warm and they also have a sour after taste which I’m not a fan of. But as always, you might like it so feel free to give it a try.

I don’t only like overnight oats when I’m in a rush in the morning. I like to make them ahead every day. That way I don’t have to worry about what I’m going to have for breakfast and start my day off right away.

You might think I must get bored of them since I eat them every day but believe me, not at all! I maybe would be if I were going to eat the same flavour overnight oats every day but since there’s endless combinations, I don’t think I’ll ever get bored of them. Just try making the apple pie overnight oats I made some time ago and these lemon blueberry ones and you’ll see they don’t feel like they have the same base at all!


BLUEBERRY LEMON OVERNIGHT OATS 🍋


Ingredients:

  • 150 g oats
  • 2 tbsp chia seeds
  • 1/3 cup blueberries (frozen or fresh)
  • 1 ½ cup plant-based milk
  • juice pf one lemon
  • 2 tbsp lemon zest
  • 1 - 2 tbsp agave syrup

Method:

1/ In a medium bowl add oats and chia seeds. Mix and then add plant-based milk, lemon juice, agave syrup and blueberries.



2/ Mix until evenly incorporated. Transfer to jars or containers and put in a fridge for 2+ hours or preferably overnight.

3/ In the morning take out of the fridge, garnish with some lemon zest and extra blueberries if you feel like it. Then dig in with a spoon and enjoy!

How can overnight oats look so yummy?! I've only tried to make them a few times, but let me tell you, the appearence was far from appetizing... 😅 Perhaps I'll have to try your recipe! 😋

Wow really? I'm surprised to hear that! Mine always turn out looking decent, even if I don't try. What flavour did you try making?

It's been a while since I tried to prepare overnight oats but I remember using blueberries and avocado. I also added chia seeds, and think that one of the main mistakes I made was adding too much liquid so it looked a bit like vomit 😅

The weird color was probably from avocado, I've never tried using it in overnight oats before though. Yes, liquid is another really important part when it comes to overnight oats. I recommend 3:4 ratio, so 3/4 cup liquid and 1 cup oats :)
