MEXICAN STREET FOOD - ELOTES

in food •  8 years ago

These are one of the favorite Mexican foods of @mama-pepper!

In fact, I've brought some back each of the three times that I have gone to Mexico on this trip. Though "elotes" is the Spanish name for these down in Mexico, they are also commonly called "Corn in a Cup" in English. Elotes is also used as a name for a whole roasted corn on the cob prepared a similar way, but we prefer the cup, which would technically be called an "Elote en Vaso."

BASIC RECIPE

This is another one of those excellent dishes that we have enjoyed while travelling that when we try to reproduce it ourselves, although it is incredibly delicious, it is never quite as good as the original. For those who want to attempt it though, here is the recipe.

Cook corn and then scoop cooked corn into a cup.

Drain off excess liquid.

Repeat process until total number of desired cups has been reached.

Add some mayonnaise to the top of each cup.

Add some chili sauce, hot sauce, or chili powder to the top of each cup.

Add some shredded cotija cheese to the top of each cup, or substitute crumbled feta.

Add a spoon to each cup.

Give the cup a stir and enjoy it!

When these ingredients are added together, it creates a very interesting blend of flavors. Each street vendor uses different amounts, so I'd recommend "making the recipe your own" and seeing what amounts of the ingredients work best for you. Many vendors even offer a super spicy "pica" version of the chili sauce and a regular one as well.

Needless to say, @papa-pepper likes it pica while @mama-pepper prefers the regular variety. Have any of you ever enjoyed this delicious dish?

As always, I'm @papa-pepper and here's the proof:

Hello @papa-pepper. I translated this post in Russian. Translation here: https://steemit.com/food/@igor-steem/eloty-meksikanskaya-ulichnaya-eda . Thank you! I really liked this post. I like to eat delicious. :-)

Thank you!

A good business idea to try in my country...ooops. Gotta shut my damn mouth.

Great timing since its almost fresh corn time!

My favorite is (not sure if it's "street food" but I did buy it off a truck) lengua tacos with tomatillo hot sauce

OMG I ate the same exact thing yesterday. If I took a picture of my three street tacos it would have looked exactly like that. Makes me want more. IT was so delicious.

I love Tongue Tacos!

I was trying to keep that a secret lol because they're freaking awesome and everybody needs to try them

It kind of makes me wish that the whole cow was made out of tongue!

And... amazing that it isn't a delicacy here in the US that it truly is and deserves to be!

Yes! TONGUE TACOS!

Hello @papa-pepper
Here
Ingredients
1/4 cup mayonnaise
1/4 cup sour cream or Mexican crema
1/2 cup finely crumbled cotija or feta cheese, plus more for serving
1/2 teaspoon ancho or guajillo chili powder, plus more for serving
1 medium clove garlic, finely minced (about 1 teaspoon)
1/4 cup finely chopped cilantro leaves and tender stems
4 ears shucked corn
1 lime, cut into wedges

Directions
1.Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate.

2.While coals heat, combine mayonnaise, sour cream, cheese, chili powder, garlic, and cilantro in a large bowl. Stir until homogenous and set aside.

3.When grill is hot, place corn directly over hot side of grill and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 8 minutes total.

4.Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle with extra cheese and chili powder and serve immediately with lime wedges.

Yummy!!

Oh that sounds easy enough. Going to try this. Looks yummy. Tess :)

Yes, in Honduras elote just means corn on the cob, I had never seen corn served like that.

corn with mayonnaise and chili sauce. oh wow, I have never tried. we have here, which is just butter and a little bit of salt, normal I guess. but I am interested to see how it taste, will try it in the future.

It is so simple and flexible. Looks so yummy. I guess everyone likes the street food. :) @papa-pepper

Its look delicious! You make me hungry... by the way @papa-pepper do you remember the ingredients? It is a good business, i would like to copy their formula really...

Looks yummy!

"Elotes" are corn on the cob with a wooden stick. Those are "esquites" when they are in a cup. They are both delicious! :D

Mayonnaise + cheese + anything in a cup =

yum yum to paya foods.

Great recipe! Thanks for sharing. For me regular too, no pica.

I'm such a bad cook that I could burn water.

Love Mexican food! And street food for that matter. I'd say it's one of my faves, up there with Thai! (anything with a bit of spice ;))

If pepper is one of the ingredient of this Mexican food, it has to be tasty.

Que rico!!!

I know, there's just those certain foods you cannot reproduce at home. In San Diego, there is this taco stand "Roberto's". It's the best ever. They get this flavor on the outside of their tortillas that is just amazing. I have never found anyone else's to come close.

Looks delicious an great business idea ! I am hungry now

@kam.ila

This looks absolutely delicious. I'm going to be trying it very soon. Thanks for sharing.

@papa-pepper
Nothing like an elote in Mexico! I remember one night walking somewhere in Chihuahua and it was beyond freezing (mountains in December)... I found an elote stand and when the guy gave me my elote still steeming and covered in mayo and pepper I knew my day was complete.

Corn in a cup that is very different!
Great to see different street food!

looks tasty!

This looks easy and delicious! I would prefer the mild sauce. Thanks for sharing!

I would love to try this! One of my fave Mexican foods which I just recently discovered is the sweet corn cake. It's eaten on the side. I tried to make it and it came out really good!

excellent

Love the juicy fresh corn kernels!!!!!

And I thought I was the only person who loved corn ;)

Tried this recipe at home here in Britain and it was delicious!
