in food •  7 years ago

Hello my beautiful Steemit friends!

After quite a long time, I am getting the opportunity to post about a recipe/food! As you probably know, I post only once a day and most of the time I am mainly posting on your most favorite cooking contest of Steemit : Steemit Iron Chef!

I enjoy spending a lot of time with SIC despite my busy days, as one of my main goal of being on Steemit is to bring maximum support to the maximum of original food content authors here! I have been doing it since I joined and I will keep on doing it!!!

Ok let's come back to today's post! So like I told you, finally I am getting some time to post on a recipe...and this one is surely the favorite garnish of so many foodies out there...CARAMELIZED ONIONS!!!

So many versions exists...be creative and make your own signature one!!!

Making caramelized onions is actually quite easy and you need just couple of basic ingredients! You can do so many different versions of caramelized onions, you just have to know what taste you want to get in the end of the caramelisation!!

After doing quite of different versions the last 16 years, I have finally found my signature one...as usual very simple to do and tasty for sure!

So let me show you briefly how I do it in my bistro! It is used on the rounders I serve there!

I simple sweat my onions in little butter and olive oil!
For me, red onions are the best for this recipe!

While the onions are cooking, I add chicken stock little by little and let cook for about 30 minutes!
After 30 minutes of cooking, I add some fresh thyme and whole garlic cloves to the onions!

When you see the onions drying up, keep adding some more chicken stock and cook for further 30 minutes until you start noticing the natural caramelisation happening...

Yes my friends, as onions are naturally sweet, and as caramel forms from cooking sugar, when onions are cooked for such long period, the natural sugars of onions start to caramelize making it something very intense and wonderful in flavor!

Plus here you also have the reduction of chicken stock giving even more flavor to the caramelized onion!

You can add some more butter if you wish and season with salt or sugar or even honey depending on your taste!
I simply add little rock salt and it was ready to be enjoyed!

Many people add a lot of sugar to accelerate the process while others add different spices/herbs etc... As I mentioned above...It all depends on what taste you want to get!

So this is how I make my signature caramelized onions in my bistro!

Having a big spoon on caramelized onions in my burger is what makes my it complete...without it...the burger is really not the same!

Hey my friend! What a pleasure reading from you! I would love to discover your way of doing it...I am sure must be amazing!

My mum adds a pinch of salt while frying the onions.she says salt activate the process of caramelization and oozes out moisture, from onion at faster rate.
She funnily says "Now it's our turn to make onions cry"

Hahaha! Your mum tips is really a great one! Salt really helps a lot there!

Thanks for sharing your caramelised onion recipe with us @progressivechef - I have never tried making them with stock before, and the extra addition of garlic cloves (my favourite!) and thyme makes it sound extra flavoursome and aromatic. I will definitely be giving this a try next time I make caramelised onions!
