3 cup Bread Flour
1/4 cup Sunflower Flour
1/4 cup Cashew Flour
1/2 cup Oat Flour
1 1/2 cup Water
1 1/2 tsp Salt
1 1/2 tsp Sugar
1 1/2 tsp Yeast
Reason
I like bread, but store-bought bread has a high Glycemic Index and is low in protein and fiber. The idea behind my bread is to replace part of the wheat flour with ground nut, seed, and oat flours.
Next, I am thinking of trying to remove the sugar to further lower the carbs. The flour should have plenty of carbs to feed the yeast, if given more time. This additional rising time should actually further reduce the Glycemic Index by consuming more total flour in the absence of the sugar. My only concern is a decrease in sugar leading to drier bread. I hope that the oils in the sunflower and cashew will hold enough moisture in the bread.
