I substituted fishrolls for cake as I didn't really have the complete resources for making and icing cakes in the house. So I got my ingredients and set out to make my fishrolls to serve any well wisher who comes around.
For the dough, I used
- 3cups of flour(more for kneading)
- 1 tablespoon of baking powder
- Margarine
- 1 egg
- Dash of nutmeg
- Pinch of salt
I mixed all my dry ingredients together then added my margarine, mixed together to get a crumb-like texture then added my egg and a little water to form a non sticky dough and set aside.
For my filing, I used
- Grated carrot
- Diced onions
- Pepper
- Deboned mashed fish
- Groundnut oil
I placed my frying pan on fire, added my groundnut oil and added my onions first then the grated carrot then pepper. Seasoned it lightly because of the fish then allowed it to cook for 2 minutes and added my fish. Stirred well to combine them prepared a little flour mixed with water and added it to the sauce on fire (to serve as a binding agent) and stirred it together to cook them put off the fire.
Now get your dough and roll it out to your desired shape and size and pit in the filing. Arrange them into your already oiled baking tray and egg wash the arranged rolls to get a shiny fishroll after baking. Place in the oven and bake for 15-20 minutes. Remove from oven and your fish rolls is ready.
