Today, I bring to your viewing what I refer to as a convalescent's meal. Not that I'm sick or just refunding from any particular ailment, I just had a serious craving for the food in a particular way, not necessarily the conventional way, but the way out appealed to me. So I cut my yam, peeled it and diced it into small chuncks. Washed it properly and put it in a pot, put on fire. Add your diced onions, fish and seasonings. Cover and allow to cook till very soft. Then add your grinded pepper and thinly sliced ugwu leaves, stir properly to combine everything together well and cover to cook for some minutes so the vegetable can be a bit tender. Then add your palm oil, just a little portion of it, stir in to mix well. Cover and reduce the heat. Leave to cook for about 5 more minutes before turning off the fire. My yam pottage is ready for consumption.
