Today, I had to prepare something really fast and least elaborate because I didn't have enough time to go all the way and I didn't have enough groceries at hand as I want able to stock up on groceries over the weekend so I decided to opt for jollof spaghetti to safe cost and time. I put my water on fire and allowed it to boil before adding my spaghetti to parboil. I added a little early and groundnut oil and covered it up, left it to cook and drained the water off to remove excess starch.
Then I put another pot on fire, added groundnut oil, allowed it to heat up and added a portion of diced onions, sauteed it for a few seconds and added my grinded pepper. Added seasonings to taste, stirred well and allowed the sauce to fry. Checked to see if it's cooled enough before adding the parboiled spaghetti. Stirred well to combine the spaghetti and the sauce, then turned down the heat, add the remaining diced onions and stir. Turn dowm the heat and let it steam for 5 minutes and food is ready.
Served with boiled egg.
