Whipped Berry Porridge πŸ₯„ | Simple Recipe

Good Monday Morning Friends!

Who loves red currants? Today, we’ll use them for another Finnish delicacy! A few weeks back, I shared a soup recipe with you (check it out here) and today it’s time for dessert! This pink yumminess is a childhood favorite of mine, often served with milk and sugar, but I think it’s even better just on its own. Traditionally Whipped Porridge is made out of lingonberries, but since they aren’t ripe quite yet, I wanted to prepare it from red currants. Without a doubt, the taste is as delicious as with lingonberries!

Whipped Berry Porridge πŸ₯„

Ingredients:

1 liter (4 cups) water
1.75 dl (~ β…” cup) semolina
3 dl (~ 1 ΒΌ cup) red currants
1 dl (~ a bit less than Β½ cup) sugar
pinch of salt

Method:

Place the water and the red currants into a pot and bring it to a boil. Use a potato masher to mash the berries a little. Once the mixture has boiled for a few minutes, take a sieve and pour the mixture through it into another pot. Only the skins of the berries should be left into the sieve (you can mash the berries against the sieve in order to get all the juice). Put the juice back to the stove. When it’s boiling again, add the salt and the semolina. Cook on low heat for around 10 minutes (according to your package instructions), until the semolina is cooked. Finally add the sugar, adjust the amount according to your liking! Let the porridge cool down, and whip it with a mixer.
