Vegan | Toasted Almonds, Pomegranates & Blueberry Delight!

Is today your birthday? Join me fellow Steemians, we're celebrating YOU with Toasted Almonds, Pomegranates and Blueberries!

Now, everyone loves chocolate, but sometimes we need a fruity, creamy change. Today lets mix things up. For healthy living, birthdays, holidays, or just any day...we can celebrate when it's healthy for you. Eating fruits and nuts, you can't go wrong.

So, without any further discussion! Let’s celebrate YOU…

By making Toasted Almond Blueberry and Pomegranate Cheese Cakes!

You will need

Crust:

1 cup raw almonds* toasted
1 cup organic dates

Filling:

1/12 cup raw cashews (soaked overnight)
¼ cup lemon juice
1/3 cup organic coconut oil
½ cup plant based milk
½ cup agave

Toppings:

Blueberries, pomegranate seeds or whatever fresh fruity topping you wish!

Preparation:

Lightly grease muffin tin.

First we will prepare the crust.

Place almonds in blender. Blend almonds to fine meal. Set aside.
Place dates in blender and blend until forms a ball. Combine almond meal and dates in food processor and pulse until combined.

Looks yummy!

Press mixture into muffin tins. Oh, notice this... I like to use parchment tabs in bottom of pan, this makes removal easier! Place in freezer while you prepare the filling!

Now the filling!

Add all filling ingredients to blender and blend until fully processed.

Now, take muffin tin out of freezer and fill each crust with filling. So light and fluffy!! I'm not going to lie, the filling is wonderful, so creamy! Kids both big and small will love this treat!

Topping

Top with pomegranate seeds and blueberries!
Now back to the freezer for about 6 hours!

Now, my wife Deb would like this, but it's one of the few vegan treats I'd actually like - I believe in the four food groups - meat & potatoes, fries and steaks - yeah, I know...sick. She's trying to change me...slowly. It's painful. Yesterday she made me try powdered peanut butter mixed into oatmeal...Uh, NO! LOL!!

lol, you made me laugh out loud with that comment...although, I have heard the powdered peanut butter was bad. Oh well, you sound a bit like my husband, however, he is the lucky recipient of all of those sweet treats I have been making, even for breakfast! tell Deb to keep up the good work! lol Thanks John!, you'll have to have her make these, super easy!

I will - apparently Deb got the powdered peanut butter from Cosco and is pleased with the taste in smoothies and on Weight Watchers it's very low in points while adding protein :)

PS I recommend to. Look. For coconut sugar date syrup etc because the very high fructose levels in agave and lack of health benefits is quite concerning

Thanks for the advice @celestialcow. My daughter is sugar intolerant and most sugars give her migraines. Just about all sweeteners give her migraines. I know vegan eliminates honey, so other than dates and maple syrup there aren't many. She cannot tollerate coconut sugar either. I am always juggling sugar content in recipes...I'll just need to stop using this one! All the best..
