WEDGE Salad YUMMY YUMMY

I saw a wedge salad at a restaurant yesterday while eating a big burger.

That salad sure did look good and healthy.

So I thought I would make one tonight for my son and I. He has Prader-Willi Syndrome and burns calories at about 2/3 the rate of someone that does not have the syndrome. On top of that, he is hungry even after he eats. I am always watching every calorie he eats.

Here is my super salad:

I started off with a half head of lettuce. Each salad would be 1/4 head.

Then I drizzled the lettuce with Balsamic Glaze from Modena. I like this because it is thick and sticks to the lettuce better than regular Balsamic vinegar. Mostly it is Grape Must, Balsamic Vinegar, and Wine Vinegar. It has a nice sweet/sour taste and few calories.

Next, I cut up some habanero cheese we had leftover. It is called rattlesnake cheese and is very hot but there wasn't much left and with the other ingredients was not overwhelming.

I added real bacon bits, purple onions diced fine, cranberries, pecan pieces, blue cheese, red pepper flakes and a sprinkle of black pepper.

You can vary the ingredients around to your liking. Tomatoes would have been good but I forgot to get any at the store.

I added a few more dribbles of Balsamic Glaze to the top.

The extra ingredients that did not stick to the lettuce cascaded down onto the plate.

The colors are amazing and it is a very visually appealing salad.

I added 2 ounces of Lox smoked salmon to each plate for a little protein. The onions paired especially well with the salmon. The ingredients that were on the plate I covered with the salmon 1. to make the picture tidier and 2. so I could enjoy the delicious salad ingredients when I took a bite of the salmon.

This salad is like a PARTY for your MOUTH!!

There are many tastes that pop onto your taste buds and are like a cacophony of flavor. Then the smoked salmon hits your palette and wowzers....bada boom bada bing!!!!!!

but i actually have an EVEN BETTER one for you! holy cow - its incredible and aged for over 12 years and INSANELY tasty.

This is a very good modena glaze and has grape must, wine vingar and balsamic vinegar BUT it is cheap $3.28.

If you have a much better one For me to try I am up for it!!

wait until you try this. this is like liquid gold in our house. whenever one of us pours it... the other three watch like hawks to see if theyre pouring too much hahahaha

you probably won't find it there - its usually in weird specialty stores - but you can order it

i promise. its so worth it!!!!

and a little goes a long way!!!! Most balsamics that are aged over 6 years are ok. but starting to get expensive.

aged 12? or more... that is starting to be REALLY expensive!!!

BUT... this one is relatively inexpensive. i think they started to mix olds with news... but it still tastes delicious!!!! i can't taste the difference from the old recipe!

I am gonna get some tomorrow!!

That was only 1/4 of the whole head of lettuce in the pictures.

I think "rattlesnake cheese" cause it has such a bite (is very spicy). Is an aged cheddar with habanero peppers. Want to try it?

ahh....so thats why its named rattlesnake! spicy cheese? hmm...have not taste that before...

the packaging look scary..its with tequila too!

The tequilla ads a sweet taste to it but all the alcohol has been cooked out.

If you ever have guests over you csn impress them with a gourmet salad and it is inexpensive.....you can leave out the rattlesnake cheese. Lol

That salad looks nice but i have a question. We use wedge word for potato chips here, does wedge mean something else at your side?

A wedge is a triangle shaped object
If it was steel a wedge could be used for splitting wood.

When you chop a head of lettuce in half it is too big for one salad. When you chop again it is a quarter which makes a triangle piece and is called a "wedge" in English

Hmm got it now , so they use wedge for shape here, we have potato wedges - and they are named as wedge for the shape in which they are served.

We have potato wedges but the are wedge shaped chunks of potatoes.

You said yours were chips....are chips like a very thin crisp type of chip or are they thicker like a french fry??

Oh I used the incorrect word here. I could not figure out a substitute for wedge, but they are wedges only. I still cannot think of a substitute for wedge potato wedge

WOW!!! THAT'S AMAZING THAT YOU ARE SO PROACTIVE WITH HIS FOOD AND HEALTH. I ALWAYS SAY, PEOPLE NEED TO BUY ONLY ORGANIC BEFORE ALL THAT REAL FOOD IS GONE.
