Unusual taste and aroma - How to make legendary onion soup

Hearty and warming, soups have a special place in our kitchen. The best soup for a frosty winter. Oh, it will come in handy if yesterday you drank too much ... But in general I like its absolutely unusual, but such an attractive aroma and taste.

The soup of the French poor has a rich heritage and is cooked differently. There is even a legend about Louis XV who cooked onion soup with champagne!

I share the recipe that I liked the most.

Three large portions:

  • 500 g peeled onions
  • 60 g butter
  • 20 g olive oil
  • 10 g sugar
  • 750 g saturated broth
  • 75 g dry white wine (you can even sherry)
  • 1 tbsp. l. cognac
  • black and allspice
  • nutmeg
  • fresh or dry thyme
  • bread
  • 100 g gruyere cheese

There are two very important things in this soup: broth and onions.

I made the broth rich, from chicken bones and wings - so that the lips stick together. I added a bouquet of garni to the broth. But traditionally used meat, rich.

The onions required are of good quality with whitish flavor.

I cut the onion into strips, olive oil and butter in a frying pan, heated it over medium heat and began to fry the onion, stirring constantly. And fried for about 35-45 minutes - withstand this stage.

After 20 minutes after the start, I slightly reduced the heat, salted the onions and continued to stir. Here it is important to scrape off the part that begins to fry with a spatula, it is important not to let it burn.

When the onion is very well fried and stewed, it became ruddy, fragrant and soft, I add a pinch of sugar, ground peppers, thyme and pour in cognac, and after a minute white wine is best of all sherry. I let the wine evaporate, add the broth and bring it to taste - it's about salt.

I also like to add quite a bit of roux sauce - about half a teaspoon. And - may the French forgive me - a pinch of nutmeg.

I pour the soup into the soup plate, put a slice of bread - ideally a little stale, sprinkle it with cheese, top up the soup almost to the top, add more bread, cover everything with cheese and put it in the oven under the upper grill, bake until golden brown. It's delicious!
