Brinjal masala fry/ a great side dish with non-spicy gravy

Hi Everyone,

Usually chopped onions are used for preparing brinjal masala fry but I wanted to add a small twist by replacing it with blended onions, garlic and ginger. It gave extra sweetness and aroma to the dish.

Recipe
7 Long purple brinjals
Cut into 2 inches long and deep fry in high flame.
Keep aside

As required Oil
1 tsp Mustard seeds
1 stick Curry leaves
Blend (a), (b) and (c ) with little water into smooth paste
(a) 3 Big onion
(b) 6 cloves Garlic
(c) 1 inch Ginger
3 Tomato chopped
½ tsp Turmeric powder
1 tsp Coriander powder
3 tsp Chicken curry powder
Salt to taste
2 tsp Coconut sugar
