This was a bit of a mix of a few recipes so I'll share what I did.
Bases
1/2 a chopped red onion
2 cups of corn taken off the cob
2 cups of chopped tomatoes
1/3 of a a cup ground flax seeds
Any mixed herbs you fancy, salt and pepper, to taste
Blend together then lay out thinly over a dehydrated sheets into rounds (this amount should make 3-4) and dehydrate until pliable and dry. You can use an oven on a low heat for this, google for ways to use your oven as a dehydrator.
Cheese
1 cup pine nuts
Juice of one lemon
1 small garlic clove
Herbs - I used a handful of fresh coriander
2 tablespoons water ( you may want to add more as your blending till you have your desired consistency)
3 tablespoons nutritional yeast
Salt, to taste
Blend everything together then place in a bowl in the fridge till ready to eat
Meat filling
1/2 cup walnuts
1/2 cup pumpkin seeds
2 tablespoon extra virgin olive oil
Lots of cumin and fresh coriander to taste.
Pinch of Himalayan pink salt
Blend in a food processor and store until ready to eat
Side bowl of salsa
Finely chop tomatoes, coriander and avocados in a bowl, pour over juice of half a lime and add more herbs to garnish.
