The journey of making Cassava Suman begins with harvesting the cassava. Once the cassava is harvested, it needs to be prepare for cooking. This involves washing the cassava roots thoroughly to remove any dirt or debris. The cassava is then peeled and grated.
Gathering Ingredients and Preparing the Cassava
To make cassava suman, you'll need the following ingredients:
- Grated Cassava
- Granulated/Brown Sugar
- Fresh Coconut Milk
- Coconut Flesh
- Banana Leaves for Wrapping
Begin by grating the cassava using a box grater or a food processor.
Mix the Cassava Mixture
In a large mixing bowl, combined the grated cassava, brown sugar, coconut milk and coconut flesh. Mix well until the cassava is evenly coated with the mixture.
Prepare the Banana Leaves and Assemble the Suman
Cut the banana leaves into rectangular shapes about 6 inches wide and 8 inches long. Lay a banana leaf flat on a surface. Place a small amount of cassava mixture in a center of the leaf. Fold the leaf over the filling to form a rectangular shape, and secure with a small strip of banana leaf.
Steaming the Suman
Place the suman parcels in a steamer basket and steamed over boiling water for 30-40 minutes or until the cassava is tender and the banana leaf is fragrant.
Serving and Enjoying
The cooked suman is then served warm or at room temperature. It can be eaten on its own or serve with a sprinkle of grated coconut and sugar. Enjoy the delicate flavors and textures of this traditional Filipino dessert.
