KIRSCH CHERRIES
A great Christmas Idea.
INGREDIENTS
- 1kg /2.2 table spoons of sweet cherries.
- 400-500g /2-3 cups of granulated sugar.
- 250ml/1 cup of krisch brandy.
- I large star anise or 2 smaller.
- ½ stick of cinnamon,
- 2 Cloves,1-2 tablespoons of lemon juice.
PROCEDURES
Step 1
Store cherries with a cherry pitter, they should remain whole with only a hole in the middle.
Step 2
Place in a large pot, a whole lot of foam will form with sugar once the cherries and suagr are cooking.
Step 3
Add sugar and stir carefully to mix. Add star anise cinnamon and cloves. Turn on the heat and heat gently. Stiring often but carefully until sugar dissolves completely.
Step 4
Once liquid starts to boil, stir the timer to 5 minutes . Simmer while stiring each minute in the 5.
Step 5
Remove the pot from the heat and let cool for another 4-5 minutes. Remove as much of the foam as possible, there would be alot of it when the sugar starts to boil. But it would be pretty much gone at the end.
Step 6
Add the kirsch and some lemon juice to taste. Stir well and discard the spices.
Step 7
Place Cherries into sterilized jars. Cover completely with the liquid, Clean the rim of the jars with kitchen paper and seal. Let it cool completely.
Step 8
Keep in a refrigerator or in a dark cool place. Let them develop the flavors for about 3-4 weeks before serving.
