Quarantine Soup, or I Can't Believe She Used Iceberg Lettuce

Is there anyone who does not love a good soup?

If you're like me, you value great tasting food that did not take all afternoon to make. If it gets done in one and only one pot, so much the better.

Soup is the answer people. Soup. Here is a template for soup that I have come up with, which uses only ingredients most of us have in our homes right now, and a lot of those can be leftovers. Root around in the back of your fridges and pantries, and throw stuff in some boiling liquid - what have you got to lose?

Do you have a jar of sauerkraut languishing somewhere? That would make a swell garnish.

How about a box of soba noodles you don't know what to do with? Think soup!

That jar of truffle paste you've been saving for some reason? Now is its moment to shine.

What to do with those few bites of protein leftover from last night's meal? You've got it - throw it in the soup!

Has garlic mustard taken over your garden! Put some in your soup - it's delicious!

You get the idea, and now you have the time.

I Can't Believe She Used Iceberg Lettuce Soup

For a soup, you will need:

Some sort of broth, or water
some sort of onion (optional)
some sort of vegetable (optional)
some sort of fresh green herb or other flavoring (optional)
some sort of precooked pasta, grain, or carbo-veggie (optional)
some sort of precooked protein (optional)
some sort of salt (not optional. everything tastes better with salt)
some sort of garnish (optional)

For the very yummy soup pictured above I used:

Chicken broth
Sliced shallots
Frozen peas and sliced iceberg lettuce
Chopped cilantro
Cooked mei fun noodles
Celtic sea salt
Chopped peanuts for garnish

La Methode:

Heat up the broth in a saucepan
Add the onion and bring to the simmer
Add the green vegetables and bring back to a simmer. Simmer until the veggies are cooked
Add the herb or whatever seasoning strikes your fancy
Add the carbs and/or protein
Bring all to a brief boil, season with salt and maybe some pepper
Pour it into a bowl and garnish it with something or other
