It's the 5/15 day of the Chinese New Year festival period and we're having some noodles today. Its a good change after eating so much heavy and oily food. Some good noodles does the trick and also signifies good health and longevity.
It starts with garlic and shallots that's sautéed in oil lightly until they are fragrant. After that pork slices are added and also prawns. About a minute or so into cooking, the vegetables goes in. You can use any type of vegetable you like, here we're using broccoli and some 'choy sum'.
The noodles go in last. You can also use your favorite noodles. We're using a mix of some ramen type noodles and rice vermicelli noodles. Everything is seasoned with the Chinese trio of soy sauce, oyster sauce, and dark soy sauce. Season to taste with some salt and fry for another couple of minutes and you're done.
Tip: if the noodles look a little dry, just add some oil while frying.
We ate this with some freshly pounded 'sambal' chili with 'belacan' (shrimp paste) and also some freshly squeezed lime. We also have some crispy fried shallots sprinkled on top the noodles at the end to give it some added aromatic fragrance as well as flavor and crunch to the noodles.
