We do not like to cut any of our trees down but this one was growing to close to our septic system. So we had no choice but to cut it down.
The good thing about it is it is a swamp cabbage tree. In the stores, they do not call it swamp cabbage they call it heart of pine. I guess that sounds better to say we are having heart of pine for dinner rather than we are having swamp cabbage. I will always call it swamp cabbage but that is me.
You have to peel all the outer bark away until you get to the soft core of the tree. When your knife slices through it easily, that is what you save to eat.
As you cut it you need to put it in a pot of water or it will turn color as potatoes do after peeling and left in the air.
I fried some bacon and chopped an onion to put in it, dumped some home-grown herbs, salt, and pepper. Let it cook till tender which was about 20 minutes. Let's Eat
I said in the stores it is called heart of pine I meant to say heart of palm.
