My boss brought this type of food today, by mere looking at it, I have already concluded that it not something I have tasted before.

The food is delicious but I was curious about what the food is made of, so I have to ask my boss to tell me about the food, she is an igbo woman and you know igbo food is yummy yummy.😋

She was like: are you surprised... have you not eaten it before, it a food from your place(akwa ibom) but I cook it in different way. which type of food is that? Don't worry guys, I will gist about it later.

INTRODUCTION

Today's contest is about healthy food in our environment that can be eaten in the morning, afternoon and night, whether it's food full of preservatives or fresh from garden, and most importantly, the healthy benefit of the food am about to gist you about. Are you following? Let's begin.

WHAT ARE THE HEALTHY FOOD IN YOUR PLACE THAT'S SUITABLE FOR MORNING, AFTERNOON AND EVENING.

Interesting, if you ask someone from Calabar or akwa Ibom most of their food, he or she will likely to mention EKPANGKUKWO. This particular food in made from cocoyam, if you have never eaten it before, I bet you to give it a try. Different people cook it in different way, in akwa ibom, we cook it by wrapping it with the cocoyam leaf and cutting it into smaller pieces.

My boss cook it differently, hope you still remember about the food she brought. She cook it without the leaf, she added crayfish, pomo{Cow skin}, periwinkle, fish and some brisket bone. This food can be eaten in the morning you wish to, in the afternoon and also at night. Being away from home, I tasted the one cook by my boss.......na confam.

ARE THESE FOOD FULL OF PRESERVATIVE OR IS FRESH FROM THE GARDEN?

Cocoyam is gotten freshly from the garden. oh I almost forgot, this cocoyam is a versatile vegetable that you can enjoyed at any time of day. Some people prefer it raw, boiled, roasted, or fried while most people use it with variety of dishes like stews, curries, and soups. it's all depends on how you want to enjoy your cocoyam.

WHAT ARE THE HEALTHY BENEFITS?

Now , it not about eating food, but it's about the health benefits of what that particular will do in our body. What do we derived from eating cocoyam?

Cocoyam is high in fiber, vitamin C, potassium, and antioxidants. Let's break it down:

  • Let's start with fiber, fiber is good for promoting digestive health and also regularity.

  • Vitamin C is an essential for immune function, wound healing, and what we know as collagen production.

  • Potassium helps in maintaining fluid balance and normal blood pressure.

  • Antioxidants is good for protecting cells from damage and reducing inflammation.

Cocoyam is a good source of magnesium, which is important for heart health and to regulate blood pressure.

The leaves of the cocoyam plant is a good source of calcium and protein. in what way?

  • Calcium helps in bone health, muscle function, nerve signaling, blood clotting and heart health.

  • Protein is important for muscle growth, tissue repair, and even cell function.

So you can see that you gain all this through cocoyam. I must say it again, if you haven't tasted cocoyam, try it this week and thank me later.
