Vegan Sunday Brunch- Hummus On Lettuce Boats Broccoli Couscous And Zucchini Carrot Coleslaw

Today is Sunday the day I used to go for brunch years ago. I wasn't vegan at the time so there was plenty of bacon, eggs and everything else that we could think of.

I haven't gone for brunch in over twenty years but I have to say it was fun to get up late after a Saturday night out and go out for something to cure a hangover with the very friends that influenced me to get the hangover.

Well now that we can't go for brunch even if we tried, I had to make it here at my in laws' place where things must be done as fast as possible. They are home today. Marc's mother can't stand the smell of cooking unless it's her own. They live on fried eggs and ham. For special occasions there will be pork chunks fried in thick oil and potatoes. If she smells anything else it makes her feel sick.

So today I made the typical vegan staple usually eaten with pita. I made good old hummus. To switch it up a bit I reserved some of the chickpeas and roasted them for a garnish.

I thought why not do couscous since I have some left in the cupboard and it is a fast thing to make. I added broccoli that I had in the fridge.

I try not to consume too much gluten so since I had couscous which is not gluten free, I decided to have a side salad and put the hummus in lettuce leaves instead of the popular pita.

I stuffed lettuce leaves and put the roasted chickpeas on top for some texture. I can't get enough spice so I added a generous sprinkle of cayenne.

Usually coleslaw is done with cabbage and carrots but I have really been getting into zucchini lately. I like to use my handy grater that makes long strips and you can't do that with cabbage.

Some people don't like creamy coleslaw. If you are one of them you could leave out the dates and dijon which makes it creamy.

Packing the romaine leaves with hummus made it fun and it's a good way to get people that hate salad to eat it. I know plenty of people who hate salad. I don't really get it.

I guess it doesn't have to be Sunday anymore that we have brunch. I just may do it again tomorrow.
