"Chana Masala"!
Ingredients:
1 cup dried chickpeas (or 2 cans of chickpeas, drained)
2 tablespoons vegetable oil
1 large onion, finely chopped
1 teaspoon ginger paste
1 teaspoon garlic paste
2 green chillies, finely chopped
2 large tomatoes, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric powder
Salt to taste
Fresh cilantro leaves, chopped (optional)
Instructions:
If using dried chickpeas, rinse and soak them in water for at least 6 hours or overnight. Drain and rinse again.
In a large pot, cover the chickpeas with water and bring to a boil. Reduce heat and simmer until the chickpeas are tender, about 45 minutes to 1 hour. Drain and set aside.
In a separate pan, heat the oil over medium heat. Add the chopped onions and sauté until they turn translucent.
Add ginger paste, garlic paste, and green chillies. Sauté for another minute.
Add chopped tomatoes and cook until they turn soft and mushy.
Add ground cumin, coriander, garam masala, turmeric, and salt. Mix well and cook for 2-3 minutes.
Add the cooked chickpeas and mix well with the spice mixture.
Add a little water if needed and simmer for 5-10 minutes.
Garnish with fresh cilantro leaves (optional).
