Meet me i am Faran Nabeel your Food Preservation teacher this is my second lesson of Food Technology in which my Previous lecture We are discuss about the How to determine total soluble solids in sugar cane juice with the help of Refractometer. now the time of our second lesson i hope it is very beneficial for you.
In which lesson we are discuss about the Determination of PH in sugar. Today topic is very interesting and informative for everyone i hope you really like it my lesson.
The Principle of Determination of Ph in sugar is dependent on the ; Electrode of PH meter will be dipped in sugar solution. The PH meter will display the PH of solution.
In which the process of determination of ph on sugar we are used some basic equipments. And all equipments are available in our lab and now you see in the below table there are some equipments are used for determination of ph in sugar.

Now you see in the upper table there are some basics equipments which i used for determination of PH in sugar.
There Procedure is very simple and easy and i am also practically performed the determination of PH is sugar on my laboratory. And now I will share you his methods.
Now you see in the below there are some basics steps are performed for find the PH in sugar.
Calibrate th PH meter in 4.0 , 0.7 and 0.10 ph with buffet solutions.
Prepared the 10 % sugar solution with the help of water and sugar.
Maintain the temperature of solution or sample with the help of water bath.
Insert the electrode of PH meter in solution.
Note the reading when it is stable (usually take 30 seconds).
Now you carefully read all following steps which i write in the upper there are some basics steps are performed for find the PH of sugar solution.
- -ve log of H+ or OH- concentration in a solution is called PH.

1 Acidic / Acidic 6.9 7n 7.1 basic/basic 14

And now you see in the upper i am performed all steps for three times and all time we find the ph of sugar solution is different. So, this is the rules of every Food industry is we are find the average of ph we are performed all steps dor three times and then we easily find the perfect ph of sugar solution.
