Saffron Lamb Chops with Raita

Ingredients:-

  • 1 cup yogurt.
  • 3/4 cup chopped cucumber.
  • 1/4 cup chopped onion.
  • 1/4 cup fresh cilantro.
  • 2 tsp lemon juice.
  • 1 tsp ground coriander.
  • 1/2 tsp saffron.
  • 1 clove gralic minced.
  • 1/2 tsp salt.
  • 1/2 tsp ground black pepper.
  • 2 tbsp olive oil.
  • 8 small lamb chops.

Method:-
MAKES 4 SERVINGS.

  • For raita, place yogurt, cucumber, onion, cilantro, lemon juice and coriander in a blender. Blend on speed until finely chopped, but not pureed. Store in an airtight container in the refrigerator until ready to use.

  • Combine saffron, garlic, salt and black pepper in small bowl. Rub into lamb chops, let stand at room temperature 15 minutes.

  • Heat 1 tsp olive oil in skillet over medium high heat. Working in batches, sear lamb chops 2 to 3 minutes per side for medium rare, adding additional olive oil as needed. Transfer to plate and cover while cooking remaining lamb chops.

  • Saffron Lamb Chops is ready.

  • Serve immediately with raita.
