When we went to northern part of Cebu today, I was able to witness how the specialty bibingka at Catmon Cebu is cooked.

The bibingka’s ingrediants are very simple;

  1. Crushed or ground mixture of rice and malagkit rice or pilit
  2. Yeast
  3. Sugar
  4. Pure coconut milk or gata

Procedure:

  1. Combined all the ingredients
  2. Placed the mixture in the moulder made of banana leaves.
  3. Arranged all the moulder in the tray and placed it under fire
  4. The fuel used is the cocunut shell and its husks

Then just placed the tray with cupful of mixture under the burning coconut shell or dried skin.

The bibibgka costs 3 pieces by Php 50.00

The bibibgka is so yummy. Buying it directly at Carmen is good, since it will be sold so hot and delicious.
