When we went to northern part of Cebu today, I was able to witness how the specialty bibingka at Catmon Cebu is cooked.
The bibingka’s ingrediants are very simple;
- Crushed or ground mixture of rice and malagkit rice or pilit
- Yeast
- Sugar
- Pure coconut milk or gata
Procedure:
- Combined all the ingredients
- Placed the mixture in the moulder made of banana leaves.
- Arranged all the moulder in the tray and placed it under fire
- The fuel used is the cocunut shell and its husks
Then just placed the tray with cupful of mixture under the burning coconut shell or dried skin.
The bibibgka costs 3 pieces by Php 50.00
The bibibgka is so yummy. Buying it directly at Carmen is good, since it will be sold so hot and delicious.
