Fresh Philippine Anchovy “Bolinao” Fritters

This fresh anchovy fritter is very common in Cebu. Most especially during its fish season or when its supply is abundant in wet market.

Preparing this dish is quite simple;

  1. Wash the fresh anchovy properly. Be sure to remove small stones and seaweeds

  2. Mixed the washed fresh anchovy with flour and eggs

  3. Add the chopped onions and spring onions into the above mixture

  4. Add salt, ajinomoto and black pepper to taste.

  5. Be sure to mix well all the ingredients

  6. Heat the oil.

  7. Once the oil is heated, put a cupful of mixture into the frying pan.

  8. Wait for the mixtures to brown, then turn it to other side, to cook it evenly.

  9. Please note, use only moderate fire, to avoid it getting burnt or overcooked.

  10. Tasting first its first fritter is a must, to determine if the taste is okey.

  11. If not, you can still adjust to taste it better.

So, the fresh anchovy fritters are ready to be served with matching sauce in your dining table.

You may use mixture of soy sauce, siling labuyo and lemon or tomato catsup.

This dish cost is very affordable and easy to prepare.
