Chukauni is a spicy potato yogurt salad. It is typical Nepali pickle generally prepared and very famous in the western region of Nepal
Ingredients
Method:
Oil- 2 tablespoons
Fenugreek seeds- 1/2 teaspoon
Green chilies chopped 1
Garlic 2 cloves chopped
Turmeric -a pinch
Chopped onion - 1/2
Cumin - 1/2 tablespoon
Szechuan pepper Timur (optional)- 1/8 tablespoon
Red chili Powder - 1/2 tablespoon
Black pepper -a pinch
Plain yogur-1 cup
Chopped cilantro 1 tablespoon
Method
Boil and peel potatoes
Cut into minimum sized chunks
Add pinch of salt and a squeeze of lemon juice (to quickly season potatoes)
Add 2 tablespoons of cooking oil fry fenugreek seeds, garlic, green chilies, and turmeric until the fenugreek seed turns brown
Add to the potato mix
Add the rest of the ingredients to the bowl and mix
You can add as little or as much yogurt as you would like depending on induvial preference, although I like thicker yogurt.
