What about nut flours?
The number one consideration when choosing to use a nut flour is quantity. If you are just replacing all your grain foods with nut flour foods, you might not get most of the benefits from a paleo diet. But for occasional use to add variety and quell temptations, all of the nut flours are great choices.
Perhaps most used are almond flour and coconut flour. The quality of fats in coconut flour cannot be beat, but as a replacement in recipes, almond flour is much superior. Coconut is, in my experience, a little grittier and certainly absorbs more moisture. You absolutely must add more liquid to match the recipe.
Today's recipe in our curation effort uses Walnut Flour, which I have only used for it's darkening properties. A quick bit of research says that in many other ways it is much like Almond flour in nutrition and baking performance.
