#DISHOFTHEDAY / PASTA AL PESTO (DO YOUR OWN VEGAN PESTO) RECIPE

Ingredients:
Spaghetti 250 gr
Salt 7 gr
Water 1lt
Basil 100 gr
Nutritional yeast 20 gr
Pine nuts 30 gr
Olive oil 30 gr
Amaranth 5gr

Kitchen utensils:
Pot medium
Blender
Big fork
Soft spatula
Bowl
Colander
Scale

Directions:

Vegan pesto.
Take the blender and add the basil, pine nuts, nutritional yeast, salt and half of the olive oil. Start to blend, add now the rest of the olive oil little by little while is still blending.
The mix has to be a bit thick "not liquid".

Spaghetti:
Take the pot, add the water and salt.
When is boiling add the spaghetti and cook for around 6 to 8 min (dipent of the brand). Move the pasta every 2 minute.
Rebember to check time to time to do not overcook. All pasta has to be "al dente" means a bit hard into the core of it.

Use the colander to remove the hot water from the pasta. Now take the bowl and add the pasta and the pesto and mix. Taste to check if requires more salt, is you desire more cheese taste add some more nutritional yeast.

Serve adding some basil on top and amaranth around the plate. And ...Spaghetti al pesto done!!
