Perfect nutbush, with which you can start any dinner.
Ingredients:
Milk-130 gr.
Cream-85 gr.
Water-30 gr.
Pistachios-90 gr.
Sugar-12 gr.
salt-1 gr.
- in a 28cm diameter pan, boil milk over medium heat and wait for a thin film of caramelized milk to form on the bottom. Remove excess liquid.
- Divide the film into two parts, remove from the pan with a pastry spatula and give it the shape of a funnel.
- When the film would take the form, place it in the dehydrator at 50 C.
- Heat the cream and water and pour the pistachio mixture. Add sugar, salt and blend until smooth, then strain. (it is better to use the package, but who has it?)
