Zutaten:

  • ca. 6 kg Schwarzwurzeln
  • Schüssel mit etwas Mehl und guten Schuß Essig
  • Topf mit einer leichten aufgekochten Salzlösung
  • Sparschäler
  • Gummihandschuhe

Béchamelsauce

  • 2 EL Butter
  • 2 EL Mehl
  • 250 ml Milch
  • evtl. etwas Gemüsefond
  • mit Salz, Pfeffer und Muskat abschmecken
