Today I want to present a very well known dessert in my country Venezuela, for the abundance of this fruit on the coasts and it is my favorite dessert, from my childhood, thanks to my remembered grandmother and my dear mother, who delighted our palate with this exquisite dessert , able to make anyone happy. There are different ways to make rice with milk and coconut, but this version is healthy, with fewer calories than the original recipe, but it is also delicious.
This powerful sweet has two main ingredients that provide multiple health benefits, mainly coconut is a fruit rich in good fats and low in carbohydrates, which gives a lot of energy, and helps improve and strengthen the immune system. We can also say that this fruit has a high content of mineral salts such as potassium, sodium, phosphorus and chlorine, and is even used for after training.
Another recommendation for my choice of coconut for this health challenge is that coconut milk does not contain lactose and can be consumed by people with intolerance to it, as my child has been since he was eight months old, and as a mother we have to think about what we should prepare and that does not create damage to our special guests, another aspect of milk is that it helps to have a faster digestive action, it is a problem that I have also had since childhood as constipation and Coconut has been magical for me, it is also antibacterial and antioxidant, helping to prevent many diseases.
The other ingredient is rice, they also provide us with energy because they contain carbohydrates, rice has hardly any fat, so they do not pose a risk to our weight, since they do not fatten, and it is recommended for the improvement of the health of the Heart, due to its fibrous content, is excellent for those who practice sports like us and want to have a normal stomach performance. Then the step by step of how this delicious dessert was made.
Rice with milk and coconut:
Ingredients:
- 1/4 Kilo de Arroz (Preferably Integral)
- 1 Big Coco
- Stevia or Sweetener to taste
- 1 teaspoon salt
- Splinter Cinnamon
- 2 Cups of Coconut Milk or Skim Milk
- 3 and ½ cups of water
Preparation:
1.-The ¼ Kilo of Rice preferably is chosen integral and it is chosen very well, it is washed putting it in a container. Three cups of water are added, since this rice is harder than normal rice and salt is added and cooked over a low heat, covering it. If the water dries and the rice is not completely soft, add more water.
2.- Add skim milk, or coconut milk, it is not necessary to buy coconut milk, we can prepare it at home, it is very simple we just have to remove the coconut meat and remove the shell that wraps the coconut that is brown color, at the time of opening the coconut, we remove the coconut water that is not more than one cup, it is really delicious and very healthy to drink it. Now we proceed to scratch the coconut, place it in the blender with the coconut water, add a little warm water and let it liquefy for a few minutes until it is well liquefied and thick, finally we obtain the coconut milk, they saw that it is very easy to do, now we continue with the preparation.
3.- Once the rice is softened, add the sweetener or stevia and the coconut milk or skim milk, in this case use both milk because it makes the cream more creamy, and we lower the fire as slow as possible, until it dries When we observe that it is drying up.
4.-Cooking on low heat and stirring constantly until it thickens and gets creamy texture, to give it a special touch we add grated coconut and leave it until it dries completely. It is removed from the fire and only remains to serve it, you can also sprinkle with ground cinnamon, and even this sweet is a typical dessert of my beautiful state.
5.- When it is at room temperature, let cool in the refrigerator.
What a happiness it is to be able to taste desserts without guilt, and at the same time to keep you fit and healthy, really that the final result of this preparation was delicious, and it reminded me of the desserts of my grandmother in my childhood, this dessert of rice with milk and coconut can eat them is really healthy is suitable for people with problems of hypoglycemia and lactose intolerant.
