Porciones 6 150 gramos de arroz 3/4 taza aproximadamente 1 y 1/2 litros de leche total 1500cc. 1 taza de azúcar total 200 gramos 3 yemas 1 cucharadita de cáscara rallada de naranja Canela en polvo a gusto
Poner el arroz junto con la leche y dejarlo en remojo durante 4 horas. Incorporarle luego media taza de azúcar y llevarlo a fuego lento durante 12 minutos. Batir aparte las 3 yemas con media taza de azúcar. Incorporar la mezcla caliente lentamente a las yemas y cocinar dos minutos más revolviendo continuamente. Poner en una fuente y cuando esté frío espolvorearlo con canela. El arroz debe quedar bien cocido y algo espeso y cremoso.
