1 large bowl or 4 cups cut spinach
1/2 cup cottage cheese (cut into 1/2 inch square pieces)
4-5 garlic buds, pc happened
1/2 inch ginger, finely chopped
1-2 small green chillies, finely chopped after removing the seeds
1 large onion, finely chopped
3 tablespoons fresh cream
1/4 tsp Garam Masala (if you want)
1 tsp lemon juice
1 tsp kasoori fenugreek
1/3 cup + 1/4 cup water
2 tbsps + oil or ghee for frying
Salt, according to taste
Method
To remove the soil on the leaves of spinach, wash them thoroughly in water and clean them and cut them in small pieces. To blanch the spinach, boil it in salted water for 2 minutes.
Filter boiled spinach with sieve.
Put it in cold water and let it stay for 1 minute. After this, filter more water.
Now make a purée by mixing blanched spinach, ginger, green chillies and 1/4 cup water in a mixer.
Heat oil or ghee in a pan. Cook the paneer pieces on medium flame until it becomes light brown.
If oil is fried in the fried paneer, then put them on kitchen paper napkins to absorb more oil.
Heat 2 tbsps of oil in a separate pan. Add finely chopped onions and cook until light brown in color. Now add the grated garlic and mix it with 20 to 25 seconds of the mixture.
Add spinach puree, garam masala and salt to the mixture and cook for a while.
Add 1/3 cup water and mix well and cook on a low flame till it gets boiled. Keep on mixing it with a small spoon in the middle.
When the gravy starts boiling, add fried paneer and cook for 3-4 minutes.
Add lemon juice and kasoori fenugreek and mix well. Now bond the gas and add cream and mix it.
Remove the hot-cooked vegetables in the serving bowl and serve with bread, plain paratha or butter naan.
Tips and diversity
If you do not have paneer available then you can enjoy this Punjabi vegetable by using fried tofu to make paneer cheese.
The soft cheese is easily found in the gravy. To make the paneer soft, keep it in hot water for 10 minutes after frying it.
It is important to combine milk after straining the gas. Cream will be splashed by adding cream in the vegetable on the current gas.
If you want to increase the amount of gravy, add more water to step 7 and also add spices to taste.
To make the vegetables testier, fried Paneers are used.
If you want to make a low-calorie vegetable, use cheese without frying it.
To give the Punjabi flavor to the vegetable, add 1/4 tbsp of Kasoori Fenugreek in step-7.
Ways to serve
Spinach Paneer is served with a variety of Indian Roti. Apart from this, you can also serve him with boiled rice, cumin seeds and cucumber salad.
