SK Recipe Contest Week 11 Entry: Joy Robinson’s Melon Panna Cotta Style

Panna cotta or “cooked cream” in english is an Italian dessert. A sweetened cream thickened with gelatin.

Panna Cotta is one of those desserts that can be made with any flavor such as fresh fruits, chocolates or coffee.

Making panna cotta is fun and easy. Refrigeration takes time to achieve the desired molding consistency but it’s worth it!

Let's go and make it!



Prep Time: 15 minutes
Making Time: 10 minutes + 2
hours chilling
Total Time: 25 minutes + chilling
Serving: 3

Ingredients

200 ml milk
250 ml whipping cream
4 solid unflavored gelatin
4 tbs vanilla extract (devide in 2 parts)
400 ml melon
fresh melon for topping
2 spoon of water
70g sugar
3 leaves fresh mint (optional)


METHOD

Milk & Vanilla Gelatin Mixture:

  • Dissolve 2 pcs. of the gelatin in water for 5 minutes.

  • In a saucepan, combine the whipping cream, milk and sugar. Simmer over low heat (Note: do NOT boil!) and remove when the sugar is completely dissolved.

  • Add 2 tablespoon of the vanilla extract, the gelatins and stir well until the gelatin has completely dissolved.

  • Carefully pour into the serving glasses and refrigerate until it completely achieve your desired molding presentation for about 2 hours.

Note: You can simply just pour the mixture into the serving glasses without slanting the glasses against each other if you prefer but I just love to give it a beautiful presentation.
( I made the milk vanilla mixture before I cook our dinner and the melon gelatin after dinner.)

Melon Gelatin Mixture:

  • Dissolve the remainig gelatin in the water for 5 minutes. Pour the melon juice into the saucepan, add the remaining 50ml cream then simmer and remove from heat immediately.

  • Repeat the same process like the milk gelatin mixture by adding the vanilla and gelatin. Stir well.

  • After 2 hours, remove the milk gelatin mixture then gently pour the melon juice gel mixture and return to the fridge for another 2 hours or overnight.

  • This time (this morning), I twist the serving glasses and added the remaining milk vanilla mixture.

  • Serve with chopped cube melons on top!

Oh yum! I love panna cotta, and I normally make it plain and just add a little bit of honey when serving! ... but this is a great idea to serve with fruit (melons...)! Thanks for the tip!

Me too. I use honey almost in all of my desserts but I run out while making this. Checkout my yogurt fruits with honey if you like.
