The call it Vegan Cheese Cake, I call it edible Heaven

If you are a smart cosmic cookie and took full responsibility for what you introduce in to your sacred human form - body.....you probably already make your own food.
You can have this cake in your refrigerator in a few hours....if you make time to create it.
This cake is like food from heaven delivered to you by Nature herself.

It is pretty, delicious, super good for you, 100 % plant-based, and it will be as healthy as you decide it to be. ( The healthier the sweetener you choose for this cake - the better.....no white sugar syrup please).

While I was demonstrating making this cake to one amazing restaurant of magical city Kathmandu...I decided to use this opportunity to share it with you, beautiful people...the ones who inspire me to keep returning here & share. I cherish your presence in my on-line space.

So. Here is the #recipe.

What we need:

CRUST

  • 1/2 Cup DATES, soaked & pitted
    ( MEDJOOL are the best, but others work too).
  • 1/2 Cup CASHEWs, dry
  • 2 T PISTACHIOS
  • handful DRY COCONUT SHREDS
  • touch of MADAGASCAR VANILLA

CREAM

  • 1 Cup CASHEWs, soaked & dried*
  • 1 T LIME JUICE, freshly squeezed
  • 1/2 cup COCONUT CREAM
  • 1/2 cup MAPLE SYRUP - can be replaced with any other sweetener of your choice.
  • 2 T RAW COCONUT OIL
  • touch of MADAGASCAR VANILLA ( trust me, I made hundreds of these love bombs - it makes a big difference

FRUIT TOPPING
You choose - whatever you have in your kitchen right now - use it with a touch of your imagination.

  • STRAWBERRIES, l used for this cake
  • MIX BERRIES
  • MANGO-PASSION FRUIT or some fruit jam, I am sure you have a healthy one somewhere 😄

HOW TO:

  1. BLEND ( not too much ) ALL CRUST INGREDIENTS. Let the pieces create a mosaics effect. We like our crust layer crunchy.
    Using a spatula - release the mixture into a cake form & flatten the bottom layer you just created.
    Here is your chance to get CREATIVE & imagine how you wish your cake to look.
    By placing some kind of fruits or edible leaves & flowers on the inside of a cake ring - you can make this cake look like a food art.

  2. Blend all the CREAM INGREDIENTS into a smooth silky irresistible cloud of CREAM & gently pour over the crust.
    Shake it gently to even the sides of a cake & mindfully transport your creation into the freezer.
    This step requires a little patience.
    Depending on how good your freezer is, it might take from one hour to overnight.

  3. When it is frozen enough to become solid - Prepare your FRUIT TOPPING.

4.Arrange the fruits on the top. It is ok if some berries sink in....that will add to the charm.
Make your own PLANT CREAM CAKE as pretty as you wish. Use some raw chocolate sauce, flowers, COCONUT shreds.

  1. Place your cake back into a freezer for at least two hours.

Call your friends or enjoy it all by yourself & enjoy being a conscious eater, someone who makes an effort to make this world a better place.
