Gosh there is nothing more delicious than left over chili

Even cold, I'm telling you its to die for!

Topped with fresh Tomatoes, olive oil and oregano

๐Ÿ…๐Ÿ…๐Ÿ…๐Ÿ…๐Ÿ…๐Ÿ…๐Ÿ…๐Ÿ…

Left over leak and walnut cream spread for the base

And nachos for the crunch

Finally a sprinkle of nutritional yeast for the cheesy flavor!

All inside quality bio organic spelt, rye and potato flour bread

I'm not lying this is the best sandwich I ever had.

I took this beauty on my flight home from Berlin, to the envy of all the passengers next to me

When you are vegan plant based, its always a good idea to make your own travel food and not to rely on whats available, you dont want to over extend yourself.
It can make you feel weak, drowsy, irritated, forgetful. Always need to stay prepared!

DONT GO HUNGRY

when you are traveling... trust me so many things can go wrong when the body is depleted

I made this sandwich on the morning of my flight so its fresh, hate making sandwiches the night before they go all soggy!
I used all the left overs I had because they would just go to waste otherwise.

I started off by spreading the leek and walnut dip on to the bread slice, you can see how I made the dip here

Then chopping tomatoes, drizzling olive oil, oregano and Himalaya salt, with some bio cress on top. This is actually one of my favorite snacks, I love simple Mediterranean style tapas foods.

Once you put all the tomatoes on top of the sandwich, make sure to mop up the left tomato juice and seasoned olive oil with fresh bread slices.

Ok now you got some energy to finish making the sandwich without eating it all before wrapping.....

Ah just looking at these images makes my stomach rumble. Sandwiches are honesty my favorite types of meal. I went paleo once but honestly just could not live without bread! Thankfully I've always appreciated high quality food and working in the food industry gave me access to nice wholemeal and alternative grain breads. I don't think there is anything wrong with grains in moderation.

To keep the delicious flavor and allow the sandwich to breath, wrap in paper, ideally non bleached. I learned this from years working as a cheese monger. You need to allow the food to breath, otherwise it sweats and goes horrible plus plastic wrappers and tinfoil are not good for the environment and potentially contaminate the food.
So the sandwich doesn't get damaged in transit find yourself a sandwich box to put them in.

Ok now we are good to fly :)

Oh my, this looks amazing!!! You are so right, it is best to be prepared when traveling. I almost starved to death when I was waiting at LAX airport, there was next to no options for vegans. I will always stay prepared after that experience. This recipe looks as epic as you said it was, I will be saving this for later! ๐Ÿ‘Œ๐Ÿป

Your enthusiasm is pretty contagious, well done and beautifully presented food. This looks great, and I hear at you on bread thing. I was raw vegan for a while and nothing quite satisfies like quality baked bread...

Oh man, forget first class--I'd happily fly with the luggage if I had this sandwich to munch on! I'm with you on the fresh-baked bread. We have a local German bakery that makes delicious loaves. I don't think I can ever totally give that up, so I'm glad I don't have any issues with gluten!

Heyy Welcome to SSC! This is quite the creation and an all around great entry. You're absolutely correct, even vegan Chilli is awesome, I certainly love it.

I definitely found a few nice surprises in this like the leek and walnut spread. Sound great.

I did notice that you have no "validation sign" for the contest so we'll consider you entry this week as a "null." no worries tho, I still support it as an entry to SSC and so will the community. It just means that you cannot win a top prize for Week 32 is all.

This looks great @celestialcow. Just fantastic, we always beong our own food while traveling, chances are you just wont get high quality food that is acceptable to a vegan. Although I have to say that times they are a changing! Soon you will struggle to find a cancer slab... (Meat sandwich) LOL

I had forgotten about putting chips on sandwiches. I used to do that when I was a kid. I would mostly put potato chips on tomato sandwiches. It's so satisfying to get a crunch in your sandwich.

i brought these chips from the health food store so technically healthy i used to love salt and vinegar crisps on my sandwiches the crunch is really comforting for me anyway, childhood memories

One of the great blessings of living here is fresh made corn tortillas. I can go to a little shop and buy tortillas made that day on the sweet little machine they have. I don't know if they are technically organic, but it's local and usually from corn grown by the Mayans, so at least organic-ish and definitely fresh and local. Then I can cut them up and throw them in the deep fryer or fry them whole to make tostadas. So very satisfying. We also end up making our own potato crisps since the only ones they sell here are the crappy ones imported from the us and sold at exorbitant prices. Living here definitely forces me to eat healthier, and I'm really grateful for it.

I love tortilla, the real kinds like your getting. Its making me hungry thinking about it. Is Belize quite organic orientated (maybe they don't have official organic label buy are using old methods no chemicals?)

Exactly. There's no label, but most farmers quite simply can't afford chemicals and have been doing more permaculture style for generations. There are larger farms - even some of the Mennonites - that use chemicals, so it's somewhat hard to know, but I definitely feel like we are eating healthy. At the very least no produce is shipped from any further than Guatemala or Mexico, and most of it is belizean.
