Healthy Breakfast Challenge: Quick & Easy Antioxidant Bowl (Vegan)

So you wake up, tired, you don't want to have to do any work before work: this is for you!

Well my friends, mornings are not my thing. But know what helps? Getting a proper kick start!

I really wanted to support this Healthy Breakfast Contest being judged by part of the amazing healthy food community, @chetanpadliya, @xyzashu and @amy-goodrich so here's a little breakie to get you going!

Ingredients:

The best part about this recipe is that you can make it up as you go! I play around with different nuts, dried fruits and extra additives like cacao, maca root powder, lucuma, chia seeds! You name it! They all contribute to adding even more nutrients and deliciousness to your breakfast!

Here's what I used in this recipe and a simple look at what these ingredients can do for you!

  • 2 cup gluten free oats (soaked overnight)
  • 3.5 cups coconut milk (electrolytes, non-dairy alternative)
  • 1/4 cup goji berries (antioxidant)
  • 1/4 cup chopped dates (natural sweetener, skip the processed sugar!)
  • 1/4 cup chopped figs (high fiber)
  • 1/4 cup chopped almonds (healthy fats, vitamin E, protein)
  • 1/4 cup chopped walnuts (omega-3)
  • 1 fresh, sliced banana (potassium)
  • 2/3 scoops of coconut butter (use butter of your choice) (protein, lauric acid: immunity)
  • 1 tbs coconut oil (high energy source)
  • 3 chia 'eggs' (omega-3)
  • 1 tbs cacao powder (antioxidant)
  • 1 tbs maca root (natural energy, antioxidant)

How to Make it:

  • Soak your oats in water overnight (this makes them more digestible!)
  • Cook your oats in coconut milk on low
  • Cut up fruits and nuts into small pieces
  • Add your ingredients into the oats
  • Make chia eggs by mixing with water and letting sit (1 tbs chia + 2.5 tbs water per egg)
  • Add all together and mix until the nut butter melts in
  • Serve and top with some cacao or maca if you wish ;) (I always, always do!)

Now, wasn't that easy? I mean you could just pop everything you want into a food processor, press go, throw all that into the pan and voila if you're really feeling sluggish, don't let me stop you!

I eat this when I am actually hungry in the morning. This has never once left anyone who has eaten it wanting anything more. With the oats and the nuts alone, you've got yourself a good base to start the day off without any hunger pains kicking around ;)

This looks really healthy and delicious...Dry fruits are essential for our body and are rich with great health benefits...From Heart Health to Thyroid, it controls all.. I too had made a dry fruit recipe in blog recently...

I really believe in using healthy and nutritional ingredients when I am cooking so I agree with you 100%, dried fruits are wonderful in so many ways (yet not very many people i know eat them!) It's great to be able to incorporate them into breakfast which is the best time for fruit to be consumed. They also help the nuts digest better so it's a win win for the tummy with this breakfast :)

Ooooh! You could make a spicy version if you wanted! That would be fun! But this one is very sweet :) The chocolate and peanut butter bring it into a bit savory too, so you get a lot of different flavors!

Wow that is so cool! Sweden is serving vegan breakfasts at hotels now? Man Sweden is so cool! I really want to visit soon! I actually really don't like breakfast so I find ways to coerce myself into eating it, like this ;)

It's only one hotell that have started with vegan brunch and one restaurant also have started with a brunch on saturday. I'm a total breakfast person :D. Best meal of the day. You really should come and visit and i'll show you around :) <3

I like things fast and easy in the morning and it definitely keeps me going. A lot of times with this one, I roll over lunch into a snack and onto dinner so it's pretty good! As for the contest, this isn't mine, I haven't got mine started back up yet but it's a wonderful initiative that you should definitely get into :) <3

I saw it was @chetanpadliya who was initiating it! I shared a tofu scramble yesterday to submit for it. :) I love breakfast, so I will definitely keep an eye out for the other posts! So much yummy plant-based food going around anymore, it's hard to keep up!

Mmmm awesome choice! One of my favorites! I had my dad try it at a restaurant here the other day and he wanted to strangle me haha trying to get him converted is definitely a struggle :P

Family is definitely tough! My dad definitely eats a whole lot more plant-based items, but hasn't made a full switch. He does love to go eat at my favorite vegan restaurant, so I can't complain! :)

The really great part is you can just use whatever you have - raisins, currants, blueberries, I don't know... whatever you might have! I like the versatility and how it can change every time so you never get bored :)
