波哥美食鉴赏-清蒸鲈鱼。
①活鲈鱼,现杀,两侧都切几刀,容易入味
②鱼入盘,姜切片,葱切片均匀撒在鱼身上
③料酒,生抽,蒸鱼豉油,少量醋混合,浇淋到鱼身,腌制10分钟
④水烧开,鱼入锅蒸8分钟
⑤鱼出锅,滤掉汤汁,除掉葱片姜片
⑥葱姜切丝,均匀撒在鱼身上。热油均匀浇淋鱼身
⑦调汁(生抽,蒸鱼豉油,少量醋)均匀浇淋
