Definitely! It's happened to me so many times here in the UK. It used to upset me and sometimes I'd respond as such, but now I don't even give it any of my time or energy.
Ignorance is everywhere, and in so many forms. I'd only try to educate people who'd say this to me, if I knew I'd see them again.

Errrmmm... Every damn laowai out in China since the beginning of time? Well, maybe only since when China started opening up to the world again.
There's a lot of stupid idiots out there that somehow think that if they shout "Hello!" randomly at foreigners in the street that they will want to respond, even though they are strangers and don't know them at all. As adults, they should understand that this is not correct and proper behaviour.
Worse, yet there's stupid farmer grandparents that encourage their young children to behave in such way, possibly thinking that they're going to get a free private English tutor for them out of that brief cultural exchange. If anything, they're just making us feel guilty for rudely ignoring little kids because we're often too busy to talk to them.
Also, what makes certain types of Chinese people think that every single white foreigner in the world can even speak English? For some uneducated fools, white skin seems to equal American by default, but there's many other nation states in this big wide world, not just China and 'Waiguo.' If you travel to certain countries in Europe, you'll probably find it pretty difficult to find people who can speak English well.
As you mentioned when referring to the experiences of expats that you speak to on Facebook; you can probably now understand how foreigners have felt in China for years. Wonderful, isn't it?
For you, I'm guessing that it probably won't be the truly uneducated and dumb people shouting random ‘你好s' at you, the truly racist people will most likely just stick to the traditional 'Chinky' and dog eating jokes. What you'll probably find is that there will loads of fairly middle class, socially awkward, nerdy guys at universities with Asian princess fantasies/yellow fever that will somehow think that this is a good way to impress a Chinese girl.
They will fail to realise the fact that you've already probably had to study English for a few years to pass the IELTS/TOEFL exam in order to attend a foreign university. Unless, his Chinese is better than your English (which is highly unlikely), just speaking English and acting normal would probably be far more effective.
Then again, some of you Chinese ladies are often guilty of similar behaviour yourselves, aren't you? (Sorry!)

Hey, strayenglishman. Thanks for your commenting and expressing your feelings. It's always nice to hear experiences from others. I totally understand your situation.
I was accompanying my Belgian friends to travel to China and got many stares and requests of taking pictures together with my friends. Even me can feel annoying. I had many expat back home before but yes now I can feel their anger a bit more after living abroad. But I'm not one of expats in China so I could never imagine how many this sort of situations ever happened to you.
I understand your mixed feeling with China. I'm a victim of racism myself. Regarding the ones ( Asian princess fantasies/yellow fever), nuh, most of those who shout Nihao to me were more of either teenagers or lower educated ones.
Thanks for mentioning the effort of us learning English, it was not easy if you are familiar with China's English education. I'm doing my studies mainly in Dutch though.

As an expat, and speaking primarily in English to the people I meet, I've had a lot of:
"I'm from France"
.... uuuuhhh no, I'm not your monkey (that's not very nice for monkeys. sorry monkeys)
I do have to admit that China can be a bit tough sometimes as a foreigner. The repeated "Hello's" and "Can I take a photo with you?" are intense - to say the least.
I think the best attitude to have is to have fun with it. Find a few replies that make you giggle or have a friendly/quick question for them in their language. It will usually leave them pretty stunned as they probably did not expect it, no need to wait for their answer, just let them ponder and watch their perception of you slowly alter
