Szechuan Chicken
Ingredients:
-1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
-2 tablespoons vegetable oil
-2 cloves garlic, minced
-1 teaspoon grated fresh ginger
-1/2 teaspoon red pepper flakes
-1/4 cup soy sauce
-2 tablespoons rice vinegar
-2 tablespoons honey
-2 tablespoons sesame oil
-1/4 cup chicken broth
-1 green onion, thinly sliced
Instructions:
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chicken cubes and cook until lightly browned, about 5 minutes.
- Add the garlic, ginger, and red pepper flakes and cook for 1 minute.
- Stir in the soy sauce, rice vinegar, honey, sesame oil, and chicken broth. Bring to a simmer and cook for 5 minutes.
- Reduce the heat to low and cook for an additional 10 minutes, stirring occasionally.
- Garnish with green onion and serve.
