Easy Spiced Chickpea Lunch Wrap With Homemade Kimchi ✨ ✨ ✨

Heya lovely steemit community! It's already Sunday Funday where we live. While it supposed to be the rainy season the sun is already out and it is super hot. Though this might sound ideal for a lazy Sunday... how does $1 dollar sangrias sound?

Later this day we are going to one of our favorite hangout spots in Siem Reap... the food co-op. Not only do they provide yummy local and organic products straight from the farmers they have a beautiful and peaceful garden where they serve amazing food.

And today they are doing $1 dollar sangrias woot woot. I know where I'm going for a Sunday brunch today. What are you guys up to? Any wild plans to spend your Sunday?

But before we call it a day I want to share with you the yummy lunch wraps we made yesterday. As I said before my little family is hooked on chickpeas. It is one of our protein staple foods. Especially since we decided to go 99% plant-based we use them quite often. What about you are you a chickpea lover.... even if you are not I'm sure you will love this recipe....

Ingredients (serves 3)


6 medium wraps or tortillas
1/2 cup onion, chopped
1.5 cup bok choy, chopped
2 cups cooked chickpeas
1 cup grated carrots
4 cups packed salad greens
1.5 cup homemade kimchi

FYI: homemade kimchi recipe coming very soon. It has been so busy and kimchi is going to be my first video recipe. Since making a video is new to me, the first take didn't turn out so great. The second one is good but then I'm still learning about the video editing program. But no worries, kimchi coming up later this week!

Spice mix

1 tsp cumin powder
1 tsp coriander powder
1 tsp chili powder
1 tsp paprika powder
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
Black pepper and sea salt to taste

Directions


  1. Heat cooking oil over medium heat. Saute onion for 2-3 minutes. Stir regularly.
  2. Stir in chickpeas and herbs mix. Cook for 2 to 3 minutes more or until heated through. Stir regularly.
  3. Then add bok choy and cook until just wilted.
  4. Top wraps with salad greens, carrots, spiced chickpeas, and kimchi.

Looks and sounds really delicious. I love kimchi, but have been too lazy to make it lol. I have a nicebatch of sauerkraut left and kept using the excuse that I would finish that to make kimchi next lol. Will be looking for that recipe video. 🙌🏼🙌🏼
