Steemit Culinary Challenge#37: Chocolate Covered Strawberry Cheesecake Bites! πŸ“πŸ°πŸ«(I Hear Your Stomach Grumbling!) πŸ˜‰πŸ’œ

Who is ready for some chocolate covered strawberry cheesecake?


The answer is ME! (And you too since you're here!) Guess what else? They're vegan, gluten-free, sugar-free, fresh-fruit-infused healthy treats your kids will actually want to eat! Prepare to enjoy a guiltless pleasure my Steemian friends! Beware: they won't last long! Better double up the batch πŸ’œ

(My biggest challenge this time was getting that verification piece of paper in the shots but these mini cakes were made today from the fresh strawberries at the market, yum!) πŸ˜‰

What You Need:


All about that base

  • 1 cup soaked almonds (not necessary to soak but soaking nuts has a lot of health benefits and helps them chop smoother)
  • 3/4 cup pitted dates
  • A pinch of sea salt (I use pink Himalayan)

Gotta get my fill

1 container of organic strawberries
1 cup raw walnuts/cashew mix (soaked in water overnight)
1 teaspoon vanilla extract
2 tablespoon coconut oil
1/2 a lemon (just the juice)
1/3 cup maple syrup/honey/agave/coconut nectar (your preference of sweetener)
2 tablespoons water

Can't stop til I'm on top!

1 piece of raw chocolate (like shown here, to be melted)
or
1 cup of unsweetened chocolate chips
2 tablespoons coconut oil
2 tablespoons sweetener (maple/honey/agave/coconut)


What to do!


Part 1: All about that base:

  • Take your base ingredients and throw them in a food processor. Press play- go! Now you can let that baby whip up your base without even working up a sweat!
  • Meanwhile, you can dance up a storm, sing your heart out or upvote a couple of your friends until the mixture sticks together. You'll know when it's ready based on the noises of your friendly appliance!

  • Once you've got a smooth mixture, fill into cupcake containers half way leaving room for your cheesecake on top! (oiled beforehand to avoid any sticky situations!)
  • Now freeze! Get those treats into the freezer to settle while you move onto the next phase!

Part 2: Gotta get my fill:

  • Take all of the filling ingredients and add them into the food processor.
  • Press the button that makes it go!

  • Once it looks like a dream come true, a little bit of pink paradise, you can add it on top of the crust and put it back into the freezer.
  • Patience is a virtue. Give it a couple of hours to settle and freeze properly for best effects.
  • (If you're impatient like me or the kids are begging you for some, you don't have to wait but it does make them prettier and stay together better!)

Part 3: Can't stop til I'm on top!

  • Really, if you don't like chocolate all that much, you could just skip this step πŸ˜‰
  • However, if you're like the child in me- and LOVE everything about chocolate, let's go ahead and add it on.
  • I used a brick of raw cacao that comes with the cacao butter still within it so it melts into a thick, pasty cream
  • If you're using chocolate chips they work the same way- let's get them hot and bothered!
  • Add all ingredients to heat until smooth, liquid chocolate appears!

Go on now, and shake that chocolate all over the place!

Now you have a delicious, easy to make treat for the kiddies that is also good for them (but they'll never know it!)

I hope you all like this recipe, I know it's just become one of my new favourites! I love strawberries and am excited to let you know that I bought 2 containers, so that means another strawberry treat is on it's way tomorrow, you know, so they don't go bad πŸ˜‰

Try an ice cube tray or muffin pan, works just the same ;) Little trick I learned while traveling and not always having the right equipment! Hope you enjoy! πŸ’œ

I was so happy to find strawberries at the farmer's market! I bought a bunch ;) Now I just need blueberries! Might have to fly back home to get those since there is definitely no frost here! =D πŸ’œ

Hehe! My husband brought me some from Europe. Still have one small box left in the freezer and can't decide what to make with them. I have heard of a variety that does well in the heat! Planning on bringing some seeds.

My oh my @heart-to-heart these certainly tick the boxes of healthy yet tempting! Surely no child (or big kid haha) would turn their noses up if offered some of these, and most wouldn't believe they contain no processed sugar. I think if children are introduced to raw chocolate when they're young instead of being given milk chocolate etc, then they don't consider the raw to be bitter. It's only when they're used to sugar that it's not sweet enough for them. But like this, with the fresh strawberries and the sweetness of the base with the dates, then I imagine these cheesecake bites to be plenty sweet enough and delicious - even to a child used to sugar! Am I right? I find it funny to think how much sugar I used to put in my baked treats, when there are natural sweetners that are far superior! Excellent entry, and thanks also for getting that sign into your photos! I know it can spoil the 'final photo' sometimes, but that's perfectly acceptable doing what you did - one photo with and one without the sign :-) Good luck and I look forward to your second entry if you get chance to make one!

Well, I know I am slightly biased but to me these are plenty sweet! I think the dates more than make up for it! And the sweeteners throughout it. I have a sugar-addicted nephew who is insane and he loves my treats. I have been working with his mom for a couple of years now giving her recipes for him since he used to just eat bags of marshmellows and all kinds of crazy stuff beforehand. He has no idea that his treats are good for him either ;) Gotta be sneaky so they don't think they are being cheated out of their treats!

I agree with you. From then to now is night and day for me. It took me some time to learn the substitutions but for the most part now, I am pretty much able to switch everything over. It makes me feel better about eating so many as well ;)

I was going to ask you about the photos- I am in no way, shape or form a photographer so I struggle enough without the paper in there but I tried my best, I'll keep working on it ;)

I used to eat a shocking amount of sugar... a chocolate bar was my lunch, then I'd have several choc bars or cakes etc for my supper later on. I managed to remain a UK size 6-8 always but I'd have terrible energy highs & crashes, digestive issues, headaches... Not good! It was a little difficult phasing it out of my diet - I did it gradually every other day, then only at weekends, then not at all. I replaced ice cream with homemade frozen yoghurt mixed with pureed banana, and if I felt peckish at supper time I'd have something like homemade [sugar free] scone with a little honey spread on it, things like that, and I never ever miss the days of processed sugary treats - even my ultimate favourite that was cadbury's Twirl :-) Some people tell themselves they could never give these things up, but they can, with a little determination and sugar-free naturally sweet replacements like you and I make!

I think you're right about sneaking healthy treats to a child who has previously consumed high sugary foods. It's definitely harder when the child already has their favourite things like marshmallows, or branded sweets like those disgusting 'Haribo' gummy candies as they're much harder to replace with healthy things. But well done, I'm so pleased to hear you're having success with your nephew - hooray!
