Amazing 5 Course Dinner + Wine Pairing Made All By Culinary Students!

in food •  7 years ago

I had the opportunity to go to a special college event that was created to help raise money to help the Hawaii Community College at Hilo to get new industrial kitchen equipment, since much of the facility there is still using equipment from 50 years ago.

The event was held at Bamboo Hale ... the school's practice dining area for high-end dining services.

This event's 5 course food cost was $35 along with the pairing of wine to go along with the food, brought by local wine shop called Kadota, costing each person around $35.

Total cost of $80, which is NOT bad considering it's a 5 course meal with wine!

Below is the menu that was presented:

I have photos of each of the dishes and all of the wines except the German riesling (I just forgot both of them) haha.

Amuse-Bouche Course: Kumamoto Oyster

Paired with Prosecco (Italy Wine)

1st Course: Kampachi Kinilaw

Paired with Riesling (Germany Wine)

(Riesling Wine Not Pictured)

2nd Course: Kona Cold Lobster and Scallop

Paired with Rose (France Wine)

3rd Course: Crab Cake "BLT" Salad

Paired with Red (California Wine)

Intermezzo: Tomato Ume

No wine pairing

4th Course: Lamb "3-Ways"

Paired with Red (France Wine)

5th Course: Japanese Cheese Cake

Paired with Sherry (Spain Wine)

Biggest thanks and claps should go to these hard working culinary students at the college:

Overall, what an amazing spring season of good food during lunches and dinners!
