Quinoa Kale and Chickpeas Stuffed Butternut Squash ♥ ♥ ♥

Hello everyone!!!  

For a foodie, I started pretty well this Monday, don't you think?  ♥ 

  INGREDIENTS: 

  • 1 small/medium butternut squash 
  • ½ cup quinoa 
  • 1/2 cup dried cranberries 
  • 1 bunch kale 
  • 1 can chickpeas (rinsed and drained)  
  • 4 cloves garlic ( but you can add 6) 
  • 1 small onion 
  • 2-3 Tbsp Olive oil 
  • Dried Oregano, Salt and Black Pepper 

 INSTRUCTION how to make this pretty little squash:  

1. First, preheat the oven 

2. Cut the squash in halves and remove the seeds. Scoop a bit more to have much room for the stuffing.

        

3. Put the halves on a baking tray and grease them with a little olive oil then sprinkle some salt and pepper. 

         

4. Bake them for approximately 1 hour (or until it’s completely done). You can use a fork to see if it's ready. 

5. Meanwhile, prepare the other ingredients for the filling. First, bring to a boil some water and add the quinoua along with some salt and pepper. When it’s done, strain it very well. Chopp the kale into peaces, and prepare the onion and garlic. Rinse and drain the chickpeas. 

6. In a large skillet, heat the remaining 1 olive oil and add the garlic, onion and kale. Let them 3-4 minutes and then add the spices (oregano, salt and pepper), cranberries, quinoa and chickpeas.Cook for another 2 minutes. 

7. When the squash is ready, remove it from the oven and when is cool enough to handle (5min) , stuff the quinoa filling into the squash halves.  Put everything in the oven for 10 min more.

WOW! This looks absolutely delicious! I grow butternut squashes throughout the summer and often have a ridiculous number of them to eat over the winter months so new ways to prepare them are always welcome! I will definitely give this recipe a try :-)

Ohh how lovely is that! My favorite recipe with pumpkin is the simple ever! Just cook them in the oven and in the last 10 minutest until completely done, I add cinnamon and a little of black sugar!! Thank you very much @melbee!

Mmmm, I bet the tastes are divine togather...

I like hokkaido a lot more over the butternut, try using that if you can find it!

Also, I think it would be much more creamy if the chickpeas was made into hummus. The nutty taste of both the chickpeas and the winter squash would come out with some walnut crumbles...

The cranberries I would make into a syrupy-like sweet-sour sauce and dizzle it on top of the walnut crumble.

The quinoa and the kale I would make into a separate meal. I've got a special technique of rolling the leaves of Brassicas tightly and holding it togather with a toothpick. Before that I dip them in some kind of very thick sauce depending on rest of the plate. I steam them for around 10 min.

Don't get me wrong I'm not critiquing you, you inspired me with this, so I'm just sharing the ideas!

I know, but still worth being polite to kitties, they can get very revengeful to mean people :)

And yea that could be a recipe, it just needs perfection, trial and error and constant tasting while cooking.

Wow, you have outdone yourself again, and served in a basket, how cool is that? I see you use the in Europe more popular black kale variant, does its sweetnes go better with the butternut squash?

Ohhh, thank you @street.yoga :). I ate the basket also haha. I can find black kale, curly kale and red kale. And yes, I found that this kale its ok with squash:) At least, I didnt though to much of it. I just created the recipe and I liked it:). I find it a little bitter, and not having "sweetnes taste", this kale .

Did you ate the basket as starter or dessert? :) Lucky you! I do get the curly one from time to time in winter to make kale chips, but It's not very popular in Austria and hard to obtain. Have to try the red one when I see it.

Yeah, I now what you mean. I had it as lunch, no dessert needed haha. Because the squash. I had all types of kale I mentioned before in my garden. Although, it's very hard to obtain here too. But I have 2 sources of organic kale, raised at the country by peasants and they sell it to the local market. I mean one of them just deliver them directly to your home.

Makes me leave the city immediately. I would love to see articles of you working the garden at different seasons, like cultivating the kale and harvesting it in winter :)
