I miss eating a broiled mudfish because I like its taste. For those who do not know what a mudfish is, it is called "Snakehead fish", it is a different kind if fish because a mother is like a chicken with chicks when its young is born as it would guard the little red fingerlings which would swarm forming like a ball while them and their mother move around.

I guess that it is nature's way of preserving the fingerlings or at least some of them to adulthood for the continuity of the species. The mudfish is not known enough in many places like i the west as food but here in my country it is prized as a special food although not all are excited when it is served because some people does not eat it plus it is quite expensive compared to other fishes in the market because of the supply and not much fish mongers sells it.

But for me it is a special fish particularly when it broiled to my preference. I usually like its skin blackened over coals but only the scales while making it sure that the fish is neither overcooked/broiled nor still raw. I also eat its gits excluding the gills because the liver and the intestines tastes nice even if the bile sack exploded inside...talking about acquired taste.

Dipping this cooked mudfish in just some vinegar, fish sauce, and hot chilis and eating it with rice is really something that I truly enjoy because I will happen to be eating a lot of rice if this mudfish preparation is on the table. It is nice that my folks does not eat it especially my mother which is why I can have it all by myself. But unfortunately if my father would be the one cooking it then it will be a frustration because even though I will be telling him not to take-off the guts out prior to broiling, he will still not listen plus the fish will come like it just went out from the fish pond and into the plate.

That is why I haven't had a good meal with a broiled mudfish for years and if I will plan to have it like what I am doing now, I will just make it sure that I will be the one cooking it with the assistance of my mother doing the dirty job for me because it is just the dispatching part of the fish will most of the work is done aside from making the coals hot enough for broiling the mudfish but the most important part will be cooking the fish thoroughly because I will be having it all except the fish bones and burnt scales.
